Carl Muirhead has big dreams. He wants to open a restaurant and a bakery and be a special education teacher, though not necessarily at the same time. He’s only 22 and has a learning disability, but has already gotten his foot in the door of the food industry.

With the backing of Opportunity Services, a nonprofit that helps adults with disabilities find employment, he has been working for 18 months at a Ruby Tuesday on Jacksonville’s Northside learning the restaurant business from the ground up. He mans the garden bar, preps food and washes dishes, among other things.
“I was a little nervous at first, but I was trained by one of the best,” he said. “I got used to it.”

Muirhead loves going to work. His favorite part of the day is talking with customers, particularly about the garden bar. And he has become Ruby Tuesday’s biggest fan. “It’s a great company to work for,” he said. He is also one of Opportunity Services’ biggest fans. “I was the first Florida client they found a job for. I recommend them to other people,” he said. “It’s great when they’re helping you.”

Founded about 40 years ago in Minnesota, the agency began operations in Florida in 2006 and now has three locations — Jacksonville, Fort Myers and Tallahassee. Opportunity Services, an employment vendor for the state Vocational Rehabilitation Division since January 2013, works with state-referred disabled clients who need assistance preparing for and finding a job.
